ABSTRACT
The digestion process as per Ayurveda involves various transformational stages (Avastha Paka) and Agni play important role in this process. The Agni is responsible for the digestion, absorption and assimilation of food, which is necessary for life. Agni is endless on account of its presence in every single Paramanu of the body. However, the number of Agni in various classical Ayurvedic texts varies. Agni has been divided into Jatharagni, Bhutagni and Dhatvagni. Jatharagni is the main one, which digests four sorts of food and changes it into Rasa and Mala. The Bhutagnis acts on the particular Bhutika piece of the food and consequently sustain the Bhutas in the body. Furthermore each Dhatu is divided into various parts by the seven Dhatvagni, which acts on its respective Dhatus. The physiology of food transformations or digestion involves Madhura Avastha Paka, Amla Avastha Paka and Katu Avastha Paka depending on whether the Madhur, Amla, or Katu elements are involved in the process of digestion.
